Ingredients

  • 8 pears semi-ripe
  • 1 lemon zest and juice
  • cup honey
  • ¾ cup sherry
  • 2 cloves
  • 1 cinnamon stick
  • Pinch saffron
  • almonds chopped

Instructions

  • Peel the pears and place them in a dutch oven standing up. Spray with lemon juice.
  • In a separate saucepan, mix the remaining ingredients with 2½ cups of water and boil 10 minutes until it forms a syrup.
  • Pour the mixture over the pears, bring to a boil and lower the heat to cook slowly. Cook for 15 minutes, then leave the dutch oven uncovered to evaporate and form the sauce.
  • Remove cinnamon and cloves. Remove the pears and reduce the syrup with a quick boil of about 5 minutes. Return the pears to the dutch oven and let cool. Plate and sprinkle with chopped almonds to serve.

Notes

Varieties:
Use flavored honey such as Rosemary honey, orange blossom honey, or any others for a unique taste.
