- 2 pounds russet potatoes peeled and cut into large chunks
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup pesto prepared
- 2 tablespoons grated parmesan cheese optional
Place a steamer basket (with a trivet if needed) in the pressure cooker and add water to just under the basket.
Place the potatoes in the basket and sprinkle with the salt.
Lock the lid in place, bring to HIGH pressure, and cook for 5 minutes.
Release the pressure. Transfer to a bowl. Toss gently with the remaining ingredients and serve.
