  • 2 pounds russet potatoes peeled and cut into large chunks
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup pesto prepared
  • 2 tablespoons grated parmesan cheese optional


  • Place a steamer basket (with a trivet if needed) in the pressure cooker and add water to just under the basket.
  • Place the potatoes in the basket and sprinkle with the salt.
  • Lock the lid in place, bring to HIGH pressure, and cook for 5 minutes.
  • Release the pressure. Transfer to a bowl. Toss gently with the remaining ingredients and serve.
