1 Sauté Pan with induction cooktop


  • ½ lb rigatoni
  • ½ onion diced
  • 3 garlic cloves minced
  • 6 ounces tomato paste
  • ½ cup vodka
  • 1 cup heavy cream
  • ½ tsp sugar or to taste
  • ¼ cup pasta water the water you cook the pasta in
  • 1 tbsp butter
  • 1 tbsp parmesan cheese freshly grated
  • salt to taste
  • pepper to taste
  • oil as needed


  • Cook the pasta in a pot of boiling salted water according to packaging instructions. Be sure to reserve some pasta cooking water before draining.
  • In a sauté pan, heat some oil over medium heat. Add the onions and cook for 2-3 minutes.
  • Add the garlic and cook for an additional minute. Stir in the tomato paste and cook for 2 minutes, stirring frequently.
  • Pour in the vodka and cook for 1 minute. Add the heavy cream and mix well.
  • Add the pasta cooking water, sugar, and season with salt and pepper. Stir in the butter until melted and the fresh parmesan cheese.
  • Fold in the pasta and adjust seasoning if needed. Enjoy!
