Ingredients
- 1 cup berries of choice, fresh or frozen
- 2 tablespoons brown sugar
- ¾ cup rolled oats
- 1½ cup water
- 2 tablespoons plant-based milk
- 2 tablespoons peanut butter optional
- 2 tablespoons agave syrup
- 1 banana
- Peanut or almond butter for garnish
Instructions
- For the compote, place the berries in a saucepan and cook over medium low heat for 7 minutes until the fruit softens.
- Mash the berries with a fork or wooden spoon to achieve a marmalade texture.
- Put the rolled oats and water in a stockpot or dutch oven and cook over medium heat for 10 minutes, stirring so it doesn't stick to the pot.
- Remove from heat and add the milk, peanut butter, and agave syrup, stir to mix well.
- To serve, add porridge to a bowl pour compote on top. Garnish with peanut or almond butter if desired.
