Poke holes around the outside of the potatoes with a fork.
Generously spray the frying basket and then place the potatoes in the basket. Place the basket in the cooking pot and close the lid.
Bake for 1 hour at 400°F; turn the potatoes over after 30 minutes.
Remove potatoes to a kitchen towel and wrap in the towel until cool enough to handle.
Cut potatoes in half and scoop the flesh out into a bowl.
Add remaining ingredients into the bowl, leaving some of the cheese and bacon for garnishing.
With an electric mixer, beat until smooth. Scoop into potato shells and garnish with cheese and bacon.
Place the two half potatoes back into the frying basket and lower the basket back into the cooking pot.
Close the lid and cook at 375°F for 10 minutes or until heated all the way through. Repeat with remaining potatoes.
