1 Air Fryer Lid plus cooking pot

Ingredients
 
 

  • 2 large potatoes
  • 2 tablespoons unsalted butter
  • 2 tablespoons cream cheese
  • ¼ cup sour cream
  • 1 cup cheddar cheese shredded and divided
  • 10 slices bacon cooked and minced
  • ½ cup evaporated milk
  • 1 green onion chopped
  • Cooking Spray

Instructions
 

  • Poke holes around the outside of the potatoes with a fork.
  • Generously spray the frying basket and then place the potatoes in the basket. Place the basket in the cooking pot and close the lid.
  • Bake for 1 hour at 400°F; turn the potatoes over after 30 minutes.
  • Remove potatoes to a kitchen towel and wrap in the towel until cool enough to handle.
  • Cut potatoes in half and scoop the flesh out into a bowl.
  • Add remaining ingredients into the bowl, leaving some of the cheese and bacon for garnishing.
  • With an electric mixer, beat until smooth. Scoop into potato shells and garnish with cheese and bacon.
  • Place the two half potatoes back into the frying basket and lower the basket back into the cooking pot.
  • Close the lid and cook at 375°F for 10 minutes or until heated all the way through. Repeat with remaining potatoes.
