1 Air Fryer Lid plus cooking pot
Ingredients
- 2 large potatoes
- 2 tablespoons unsalted butter
- 2 tablespoons cream cheese
- ¼ cup sour cream
- 1 cup cheddar cheese shredded and divided
- 10 slices bacon cooked and minced
- ½ cup evaporated milk
- 1 green onion chopped
- Cooking Spray
Instructions
- Poke holes around the outside of the potatoes with a fork.
- Generously spray the frying basket and then place the potatoes in the basket. Place the basket in the cooking pot and close the lid.
- Bake for 1 hour at 400°F; turn the potatoes over after 30 minutes.
- Remove potatoes to a kitchen towel and wrap in the towel until cool enough to handle.
- Cut potatoes in half and scoop the flesh out into a bowl.
- Add remaining ingredients into the bowl, leaving some of the cheese and bacon for garnishing.
- With an electric mixer, beat until smooth. Scoop into potato shells and garnish with cheese and bacon.
- Place the two half potatoes back into the frying basket and lower the basket back into the cooking pot.
- Close the lid and cook at 375°F for 10 minutes or until heated all the way through. Repeat with remaining potatoes.
