- 8 pears semi-ripe
- 1 lemon zest and juice
- 1¼ cup honey
- ¾ cup sherry
- 2 cloves
- 1 cinnamon stick
- Pinch saffron
- almonds chopped
Instructions
- Peel the pears and place them in a dutch oven standing up. Spray with lemon juice.
- In a separate saucepan, mix the remaining ingredients with 2½ cups of water and boil 10 minutes until it forms a syrup.
- Pour the mixture over the pears, bring to a boil and lower the heat to cook slowly. Cook for 15 minutes, then leave the dutch oven uncovered to evaporate and form the sauce.
- Remove cinnamon and cloves. Remove the pears and reduce the syrup with a quick boil of about 5 minutes. Return the pears to the dutch oven and let cool. Plate and sprinkle with chopped almonds to serve.
