- 1 cup cheese shredded
- ½ pound Monterey jack cheese cubed
- 10 ounces frozen spinach thawed, drained and chopped
- 1 cup sour cream
- 14 ounces artichoke hearts can, drained, rinsed, and finely chopped
- ½ yellow onion chopped and sautéed
- 1 tablespoon garlic minced
- ½ teaspoon pepper
- 1/8 teaspoon salt
- 2 oz. pimento peppers drained
- Cooking spray
Instructions
- Spray the inside of the cooker with cooking spray.
- In a large mixing bowl, combine all ingredients and pour into the cooker.
- Close and lock the lid of the cooker and set the regulator knob to STEAM. Set the timer for 2- 2 ½ hours on Slow Cook HIGH, until hot and bubbly.
- Stir well. Serve with tortilla chips, bread, crackers or vegetables.
