Using the BROWN function, heat 1 tablespoon of vegetable oil. Add the pork and cook, breaking up large pieces until it is crumbled and brown. Remove cooked pork from the cooking pot.
Using the SAUTÉ function, add the remaining tablespoon of vegetable oil and sauté the shallots with a bit of salt until translucent.
While the shallots are cooking, combine garlic, soy sauce, water, ginger, mirin, rice wine vinegar, sriracha, brown sugar, and cornstarch in a separate bowl to make a sauce.
When shallots are cooked, add carrot to the cooking pot. Return the pork to the cooker and mix everything together.
Close lid and set regulator knob to the PRESSURE position. Pressure Cook on HIGH for 5 minutes. When done, quick release the pressure, carefully open the lid, add mix. Season with salt and pepper.
To serve, wrap a few tablespoons of pork mixture inside a lettuce leaf and enjoy!
