- 2 tablespoons vegetable oil divided
- 1 pound ground pork
- 1 shallot minced
- 1 large carrot thinly sliced
- 2 teaspoons garlic minced
- 1/8 cup soy sauce
- 1/8 cup water
- 2 teaspoons ginger grated
- 1 tablespoon Mirin
- 1 tablespoon rice wine vinegar
- 1 tablespoon Sriracha or more for extra spicy
- 1 teaspoon brown sugar
- 1 teaspoon cornstarch
- 8 whole lettuce leaves washed, patted dry
- Salt and pepper to taste
Instructions
- Using the BROWN function, heat 1 tablespoon of vegetable oil. Add the pork and cook, breaking up large pieces until it is crumbled and brown. Remove cooked pork from the cooking pot.
- Using the SAUTÉ function, add the remaining tablespoon of vegetable oil and sauté the shallots with a bit of salt until translucent.
- While the shallots are cooking, combine garlic, soy sauce, water, ginger, mirin, rice wine vinegar, sriracha, brown sugar, and cornstarch in a separate bowl to make a sauce.
- When shallots are cooked, add carrot to the cooking pot. Return the pork to the cooker and mix everything together.
- Close lid and set regulator knob to the PRESSURE position. Pressure Cook on HIGH for 5 minutes. When done, quick release the pressure, carefully open the lid, add mix. Season with salt and pepper.
- To serve, wrap a few tablespoons of pork mixture inside a lettuce leaf and enjoy!
