  • 4 large flour tortillas
  • 1 cup cheddar cheese shredded
  • ½ cup whole kernel corn drained
  • ½ cup red bell pepper diced
  • ½ cup black beans drained
  • 2 green onions chopped
  • ½ teaspoon cumin
  • ½ teaspoon garlic salt
  • ¼ teaspoon black pepper


  • Mix all the ingredients except for the tortillas together.
  • On one half of a tortilla, spoon a generous amount of corn-bean mixture. Fold over the other half covering the mixture. Repeat with remaining ingredients.
  • Place the folded quesadillas on the cooking trays making sure not to overlap.
  • Bake each tray one at a time for 6-8 minutes at 400ºF. Flip quesadillas halfway through.
