- 4 large flour tortillas
- 1 cup cheddar cheese shredded
- ½ cup whole kernel corn drained
- ½ cup red bell pepper diced
- ½ cup black beans drained
- 2 green onions chopped
- ½ teaspoon cumin
- ½ teaspoon garlic salt
- ¼ teaspoon black pepper
Instructions
- Mix all the ingredients except for the tortillas together.
- On one half of a tortilla, spoon a generous amount of corn-bean mixture. Fold over the other half covering the mixture. Repeat with remaining ingredients.
- Place the folded quesadillas on the cooking trays making sure not to overlap.
- Bake each tray one at a time for 6-8 minutes at 400ºF. Flip quesadillas halfway through.
