  • 1 pound yellow baby potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper ground
  • 1 teaspoon fresh parsley chopped
  • 1 tablespoon parmesan cheese grated, optional
  • Cooking spray

Instructions
 

  • Slice the potatoes in half.
  • In a medium-sized bowl, toss the baby potatoes with the olive oil, salt, and pepper.
  • Generously spray the basket and then pour the potatoes in the basket.
  • Cook at 375°F for 22-25 minutes.
  • Place the potatoes in a serving dish and top with parsley. Sprinkle with parmesan cheese if desired.
