- 1 pound yellow baby potatoes
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- ½ teaspoon black pepper ground
- 1 teaspoon fresh parsley chopped
- 1 tablespoon parmesan cheese grated, optional
- Cooking spray
Instructions
- Slice the potatoes in half.
- In a medium-sized bowl, toss the baby potatoes with the olive oil, salt, and pepper.
- Generously spray the basket and then pour the potatoes in the basket.
- Cook at 375°F for 22-25 minutes.
- Place the potatoes in a serving dish and top with parsley. Sprinkle with parmesan cheese if desired.
