  • ¼ cup olive oil
  • ½ large onion chopped
  • 3 garlic cloves minced
  • ½ cup orzo pasta
  • 1 cup long grain white rice
  • cup chicken broth
  • ¾ tsp salt
  • ¼ tsp coriander
  • ¼ tsp garlic powder
  • ¼ tsp ground black pepper
  • ¼ tsp onion powder
  • ¼ tsp paprika
  • 1 tsp dried parsley

  • Use the Sauté function to heat the oil. Add the onions and garlic and sauté for 1-2 minutes.
  • Add the orzo and stir to coat with oil, cook for 2-3 minutes.
  • Add the rice and cook for another 3-4 minutes, or until the grains turn bright white.
  • Add the broth, salt, coriander, garlic powder, pepper, onion powder, and paprika. Stir to combine.
  • Close and lock the lid. Pressure cook on HIGH for 3 minutes.
  • Once the cooking time is done, turn the cooker off to naturally release pressure. This will take anywhere from 10-15 minutes.
  • Carefully open the lid and add the parsley, stir well and let the rice sit for a few minutes before serving.
