  • 1 tablespoon coconut oil
  • 1 medium yellow onion diced
  • 4 cloves garlic minced
  • 1 teaspoon fresh ginger minced
  • 1-2 serrano peppers diced, (omit for a non-spicy option)
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon chili powder
  • 2 teaspoons curry powder
  • 2 teaspoon garam masala
  • 1 teaspoon salt
  • black pepper to taste
  • 1 cup red lentils
  • 2 cups vegetable broth
  • 14 ounces crushed tomatoes
  • 13.5 ounces coconut milk
  • 3 tablespoons unsweetened creamy almond butter
  • ½ small lemon juiced
  • ½ cup fresh cilantro roughly chopped


  • Using the Sauté function, heat the coconut oil. Add the onion, garlic, ginger, and serrano peppers (if using) and cook for 2-3 minutes, stirring frequently.
  • Add the turmeric, cumin, coriander, chili powder, curry powder, garam masala, salt, and pepper. Cook for another minute, stirring frequently.
  • Pour in the vegetable broth and use a wooden spoon or spatula to scrape up any browned bits on the bottom of the pot. Add in the lentils and the crushed tomatoes and mix well.
  • Close and lock the lid of the cooker. Pressure cook on HIGH for 20 minutes. Once time is up, turn off the multicooker and allow pressure to release naturally (this may take around 10-15 minutes).
  • Remove the lid and stir in the coconut milk and almond butter until the curry has thickened (you might need to turn on the Simmer function if the cooker has lost too much heat).
  • Stir in the lemon juice and cilantro. Serve over rice or with naan bread, garnish with additional cilantro if desired. Enjoy!
