Quinoa with Broccoli
In the cooker heat the olive oil and stir in the garlic. Add the rinsed quinoa, chicken stock, and soy sauce.
Lock the lid in place, bring to HIGH pressure, and cook for 7 minutes. Release the pressure. Remove the lid and immediately stir in the broccoli florets.
Re-cover the cooker and let ingredients sit for 4 additional minutes-do not turn on the heat. The residual heat will perfectly cook the broccoli. Serve immediately.
