Ingredients
- 1 cup quinoa rinsed in cold water and drained
- 1 tablespoon olive oil
- 1 clove garlic minced
- 2 cups chicken stock
- 1 teaspoon soy sauce
- 1 cup broccoli florets
Instructions
- In the cooker heat the olive oil and stir in the garlic. Add the rinsed quinoa, chicken stock, and soy sauce.
- Lock the lid in place, bring to HIGH pressure, and cook for 7 minutes. Release the pressure. Remove the lid and immediately stir in the broccoli florets.
- Re-cover the cooker and let ingredients sit for 4 additional minutes-do not turn on the heat. The residual heat will perfectly cook the broccoli. Serve immediately.
