Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup 100% pure pumpkin canned
- 2 eggs
- 1/2 cup brown sugar firmly packed
- 1/3 cup milk
- 1/4 cup honey
- 3 tablespoons vegetable oil
- 1 1/2 teaspoons pumpkin pie spice
- 1 teaspoon pure vanilla extract
- 1/4 cup sugar
- 1 teaspoon cinnamon
Instructions
- Spray two sets of silicone egg bites molds and their lids with nonstick cooking spray and set aside.
- In a large mixing bowl, sift together the baking powder, baking soda, salt, and all-purpose flour. Mix well.
- In a medium mixing bowl, combine pumpkin, eggs, brown sugar, milk, honey, vegetable oil, pumpkin pie spice, and vanilla extract and whisk together.
- Add wet ingredients to dry ingredients and mix until well combined.
- Pour the pumpkin batter into the wells of the two molds. Cover both molds with silicone lids or with foil.
- Add 1 1/2 cups of water to the removable pot and place the molds on the cooking rack. Lower the rack into the pot.
- Close and lock the lid. Set to HIGH pressure and cook for 12 minutes.
- After the time is up, turn off the cooker to naturally release pressure. Once pressure is released, carefully remove the cooking rack from the pot.
- Remove lids from the bite molds and de-mold the bites onto a plate.
- Combine cinnamon and sugar in a small bowl. Roll the bites in the cinnamon and sugar mixture. Enjoy!
