  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup 100% pure pumpkin canned
  • 2 eggs
  • 1/2 cup brown sugar firmly packed
  • 1/3 cup milk
  • 1/4 cup honey
  • 3 tablespoons vegetable oil
  • 1 1/2 teaspoons pumpkin pie spice
  • 1 teaspoon pure vanilla extract
  • 1/4 cup sugar
  • 1 teaspoon cinnamon


  • Spray two sets of silicone egg bites molds and their lids with nonstick cooking spray and set aside.
  • In a large mixing bowl, sift together the baking powder, baking soda, salt, and all-purpose flour. Mix well.
  • In a medium mixing bowl, combine pumpkin, eggs, brown sugar, milk, honey, vegetable oil, pumpkin pie spice, and vanilla extract and whisk together.
  • Add wet ingredients to dry ingredients and mix until well combined.
  • Pour the pumpkin batter into the wells of the two molds. Cover both molds with silicone lids or with foil.
  • Add 1 1/2 cups of water to the removable pot and place the molds on the cooking rack. Lower the rack into the pot.
  • Close and lock the lid. Set to HIGH pressure and cook for 12 minutes.
  • After the time is up, turn off the cooker to naturally release pressure. Once pressure is released, carefully remove the cooking rack from the pot.
  • Remove lids from the bite molds and de-mold the bites onto a plate.
  • Combine cinnamon and sugar in a small bowl. Roll the bites in the cinnamon and sugar mixture. Enjoy!
