1 Skillet plus induction cooktop
Ingredients
- 2 lbs potatoes about 4
- ½ onion shredded
- 2 large eggs
- 2 tbsp breadcrumbs
- ½ tsp salt
- ¼ tsp pepper
- Canola oil as needed
- Sour cream optional
Instructions
- Rise the potatoes and cut them in half lengthways. Do not peel them.
- Shred the potatoes using a handheld grater or food processor.
- Squeeze out the extra liquid in the shredded potatoes into a smaller bowl using a cheesecloth or fine mesh strainer. Get rid of the liquid, but keep the white potato starch at the bottom.
- In a large bowl, mix the shredded potatoes, onions, eggs, breadcrumbs, potato starch, salt, and pepper.
- Heat a large skillet over medium-low heat. Once heated, add some canola oil.
- When the oil is hot, scoop 1/4 cup of the latke mixture into your hand and form it into a pancake. Squeeze out any excess liquid from the pancake before placing on the skillet.
- Let each latke cook for 5 minutes on each side. Do not turn up the heat!
- Serve immediately with sour cream if desired.
