  • 2 lbs potatoes about 4
  • ½ onion shredded
  • 2 large eggs
  • 2 tbsp breadcrumbs
  • ½ tsp salt
  • ¼ tsp pepper
  • Canola oil as needed
  • Sour cream optional


  • Rise the potatoes and cut them in half lengthways. Do not peel them.
  • Shred the potatoes using a handheld grater or food processor.
  • Squeeze out the extra liquid in the shredded potatoes into a smaller bowl using a cheesecloth or fine mesh strainer. Get rid of the liquid, but keep the white potato starch at the bottom.
  • In a large bowl, mix the shredded potatoes, onions, eggs, breadcrumbs, potato starch, salt, and pepper.
  • Heat a large skillet over medium-low heat. Once heated, add some canola oil.
  • When the oil is hot, scoop 1/4 cup of the latke mixture into your hand and form it into a pancake. Squeeze out any excess liquid from the pancake before placing on the skillet.
  • Let each latke cook for 5 minutes on each side. Do not turn up the heat!
  • Serve immediately with sour cream if desired.
