  • 3 tablespoons butter
  • 4 tablespoons brown sugar
  • 3 cups pineapple crushed, with juice
  • 3 tablespoons dark rum or more to liking
  • 1/4 teaspoon vanilla extract
  • 1 teaspoon cinnamon


  • Melt butter in the pressure cooker over medium heat, then add the sugar and stir.
  • Add the crushed pineapple with juice (juice should be exactly 1/2 cup – if not, add enough water to amount to 1/2 cup), rum, vanilla extract, and cinnamon.
  • Close lid, bring to HIGH pressure. Stabilize pressure and cook for 3 minutes.
  • When done, release the pressure, open the lid, and stir. Serve over vanilla ice cream, pound cake, or as desired.
