- 2 pounds russet potatoes peeled and cut into large chunks
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup pesto prepared
- 2 tablespoons grated parmesan cheese optional
Instructions
- Place a steamer basket (with a trivet if needed) in the pressure cooker and add water to just under the basket.
- Place the potatoes in the basket and sprinkle with the salt.
- Lock the lid in place, bring to HIGH pressure, and cook for 5 minutes.
- Release the pressure. Transfer to a bowl. Toss gently with the remaining ingredients and serve.
