Slice the zucchini into thin chips (about ½ inch thick) using a knife or mandolin.
In a small bowl, beat the eggs. In another small bowl, combine the breadcrumbs, Parmesan cheese, and salt and pepper to taste.
Dip the zucchini slices one at a time in the eggs and then the bread crumb mixture. You can also sprinkle the breadcrumbs onto the zucchini slices with a spoon.
Spray the frying basket with cooking oil and place the zucchini chips in the frying basket, but do not stack.
Spray the chips with cooking oil from a distance (otherwise, the breading may fly off). Place frying basket in cooking vessel and close the air fryer lid. Cook at 375˚F for 10 minutes.
Remove the cooked zucchini chips from the basket, then repeat with the remaining zucchini.
