Combine 3/4 cup flour and salt in a shallow dish. Beat remaining flour, buttermilk, and egg together in a separate shallow dish until smooth and thickened. Add the breadcrumbs to a separate shallow dish.
Lightly dredge onion rings in flour. Dip onion rings into the buttermilk mixture and let excess liquid drip off. Dredge onion rings in breadcrumbs until evenly coated.
Spray frying basket and onion rings with cooking spray and arrange onion rings in a single layer in the frying basket, working in batches as needed.
Place frying basket in cooking vessel and close the lid. Set the temperature to 400°F and cook onion rings for 5 minutes.
Flip onion rings and continue cooking until they become brown and crispy, about 5-7 minutes more. Repeat the same steps with remaining onion rings.
