In a large bowl combine the chopped meat, salt, pepper, bread, parsley, onion, garlic, egg, chicken stock, and Worcestershire sauce. When well combined, shape mixture into two small loaves.
Wrap each in wax paper and chill several hours to firm.
Heat the oil in the cooker and brown the loaves well on all sides. Remove when done and place the loaves in a steamer basket.
Pour off the oil and add the tomato sauce and water, season with salt and pepper.
Spread the ketchup over the meatloaves and lower the basket into the cooker.
Close the lid, bring to pressure and cook for 15 minutes on High or 28 minutes on Low. Release the pressure and remove the lid. Slice and serve.
