In a large bowl, whisk the flour, matcha, baking powder, and salt together.
Make a well in the center of the mixture and add the milk, egg, olive oil, and vanilla extract. Whisk until just combined, a few clumps are ok.
Lightly grease a skillet with oil and heat over medium-low heat.
Add 2-3 tablespoons of batter onto the center of the pan, spreading batter with the back of the spoon. Cook on one side until small bubbles start to rise to the surface and burst, about 1 minute.
Flip and cook the other side until edges are lightly golden brown, about 1 minute more. Repeat with remaining batter.
Serve with honey, syrup, fruits, or any other desired toppings.
