Ingredients
- ½ cup almonds
- ½ cup walnuts
- ½ cup seedless dates
- 2 tablespoons coconut oil
For the Filling
- 1¼ cup raw cashews
- 3 limes juiced and zested
- 1 avocado
- 2 tablespoons agave syrup
- 2 tablespoons coconut oil
Instructions
- Soak the cashews for at least 4 hours before starting.
- Put the almonds, walnuts, dates, and 2 tablespoons of coconut oil in a food processor and blend them into a paste. It does not matter if all the nuts are completely ground, this will add some texture to the crust.
- In a 9"-10” pie or cake pan, add the crust mixture and press it down into the pan to shape the crust. It should be even and compact. Place the crust in the freezer to harden.
For the Filling
- Strain the soaking cashews so all the water drains. Put them in the blender with the rest of the filling ingredients. Blend into a smooth mousse, without lumps.
- Remove the crust from the freezer and pour in the filling. Smooth it out, distributing it evenly with a spatula or spoon.
- Place the cake back into the freezer for 3 hours until it becomes very firm.
- To serve, remove the cake from the freezer and allow it to thaw. After 20 minutes you can unmold and cut the cake.
Notes
Garnish with lime zest or very thin slices of lime.
