1 Skillet with induction cooktop
Ingredients
- 1 lb. fresh asparagus about 15 spears
- 3 tbsp extra virgin olive oil
- 3 garlic cloves finely chopped
- ½ lemon juiced and zested
- Salt to taste
- Pepper to taste
Instructions
- Cut the bottom part of the asparagus stems, about 1-2 inches.
- Heat a large skillet over medium heat and add the olive oil.
- Add asparagus and cook for about 3-5 minutes depending on thickness of asparagus. Thicker asparagus may require longer cooking time.
- Add garlic and continue to cook for about 1-2 minutes. Season with salt and pepper.
- Add lemon juice and cook for another 30 seconds or so, then remove from heat.
- Add lemon zest and toss to combine. Serve.
