  • 4 lamb chops
  • ¾ teaspoon dried rosemary
  • ½ teaspoon dried thyme
  • ¼ teaspoon dried basil
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon olive oil
  • 1 shallot minced
  • cup balsamic vinegar
  • ¾ cup chicken broth
  • 1 tablespoon butter


  • Combine rosemary, thyme, basil, salt, and pepper in a small bowl. Rub mixture onto the chops, coating both sides. Place chops onto a plate, cover, and let sit for 15 minutes.
  • Heat oil in a large skillet over medium-high heat. Cook lamb chops for about 4 minutes per side. Transfer to a serving platter and cover to keep warm.
  • Add shallots to the skillet, cook until just browned, 2 to 3 minutes, stirring occasionally. Add vinegar and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon.
  • Add the chicken broth, cook until sauce has reduced by half, about 5 minutes, stirring occasionally.
  • Remove sauce from the heat and stir in butter until melted. Serve over chops. Enjoy!
