For the Chicken

  • pounds chicken wings
  • teaspoons baking powder
  • 1 pinch salt or to taste
  • Cooking spray

For the Glaze

  • 1 tablespoon soy sauce
  • 1 tablespoon yuzu jam or lemon jam
  • teaspoons sugar
  • teaspoons water
  • 1 clove garlic thinly sliced
  • ½ teaspoon fresh ginger thinly sliced

  • 1 tablespoon sesame seeds

  • In a bowl, toss the chicken with baking powder, and then season with salt.
  • Preheat the air fryer lid at 375°F for 1-2 minutes before placing the frying basket into the cooking pot.
  • Spray the frying basket with cooking spray and arrange wings in a single layer in the frying basket, working in batches if needed. Lower the basket into the preheated cooking pot.
  • Close the lid and cook at 375°F for 25-30 minutes or until the temperature near the bone reads at least 165°F.
  • While the chicken is cooking, whisk the soy sauce, yuzu jam, sugar, water, garlic, and ginger together in a small saucepan or skillet over medium heat.
  • Bring to a boil; reduce heat and simmer until the glaze is reduced by half, about 1 to 2 minutes.
  • Transfer wings to a bowl, pour the glaze over the wings, and toss. Garnish wings with sesame seeds.
