  • 3 lb Chicken cut into pieces
  • 1 Onion chopped
  • 3 Medium tomatoes sliced
  • 1/2 cup Chicken broth or stock
  • 1/4 cup Parsley chopped
  • 1 tablespoon Fresh rosemary
  • 1 tablespoon Fresh sage chopped
  • Hot cooked white rice or brown rice
  • Pepper to taste
  • Salt to taste


  • Heat butter in the pressure cooker and brown chicken on all sides.
  • Remove chicken and sauté onions until golden brown.
  • Add tomatoes, parsley, chicken stock, salt, and pepper. Add chicken and herbs.
  • Close the lid and bring to pressure. Cook for 15 minutes on High or 28 minutes on Low.
  • Release pressure, remove the lid, and serve over rice.
