- 3 lb Chicken cut into pieces
- 1 Onion chopped
- 3 Medium tomatoes sliced
- 1/2 cup Chicken broth or stock
- 1/4 cup Parsley chopped
- 1 tablespoon Fresh rosemary
- 1 tablespoon Fresh sage chopped
- Hot cooked white rice or brown rice
- Pepper to taste
- Salt to taste
Instructions
- Heat butter in the pressure cooker and brown chicken on all sides.
- Remove chicken and sauté onions until golden brown.
- Add tomatoes, parsley, chicken stock, salt, and pepper. Add chicken and herbs.
- Close the lid and bring to pressure. Cook for 15 minutes on High or 28 minutes on Low.
- Release pressure, remove the lid, and serve over rice.
