  • 2 tablespoons extra virgin olive oil
  • 8 large mushrooms sliced
  • 4 medium carrots sliced
  • 2 red onions cut in large pieces
  • 1 green bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 red bell pepper sliced
  • 2 tomatoes sliced
  • 1 broccoli flourets only
  • 1 zucchini sliced
  • Salt and pepper to taste
  • Modena or balsamic vinegar
  • Dry oregano for garnish


  • Toss the chopped vegetables in olive oil to taste and grill over medium-high heat. The grilling can be done on the barbecue grill or in a grill pan.
  • Flip the vegetables to make sure they are evenly grilled. Once grilled to your liking, remove from the heat.
  • Put all the cooked vegetables in a large bowl and add salt and vinegar and dried oregano for flavor.
  • Serve hot.


This recipe can be made with any of your favorite vegetables.
