Ingredients
- 2 tablespoons extra virgin olive oil
- 8 large mushrooms sliced
- 4 medium carrots sliced
- 2 red onions cut in large pieces
- 1 green bell pepper sliced
- 1 yellow bell pepper sliced
- 1 red bell pepper sliced
- 2 tomatoes sliced
- 1 broccoli flourets only
- 1 zucchini sliced
- Salt and pepper to taste
- Modena or balsamic vinegar
- Dry oregano for garnish
Instructions
- Toss the chopped vegetables in olive oil to taste and grill over medium-high heat. The grilling can be done on the barbecue grill or in a grill pan.
- Flip the vegetables to make sure they are evenly grilled. Once grilled to your liking, remove from the heat.
- Put all the cooked vegetables in a large bowl and add salt and vinegar and dried oregano for flavor.
- Serve hot.
Notes
This recipe can be made with any of your favorite vegetables.
