Wash the octopus thoroughly. Bring 4 cups of water to a boil in the pressure cooker.
When the water is boiling, add the octopus to the pot. Cover, lock the lid in place, and bring to HIGH pressure. Cook for 10 minutes.
Release the pressure, drain the pot and place the octopus on a cutting board. Cut into bite size pieces.
Place the octopus in a bowl. Season to taste with sea salt, sweet and hot paprika, and sprinkle liberally with olive oil.
