Ingredients
 
 

  • 5 medium onions thinly sliced
  • 4 tablespoons butter
  • 6 cups beef or chicken stock or a mixture of both
  • 1/4 teaspoon freshly ground pepper
  • 2 tablespoons dry white wine or 1 tablespoon dry sherry
  • 6 slices French or Italian bread lightly toasted
  • 1/2 cup parmesan cheese grated

Instructions
 

  • Melt the butter in the cooker, add the onion slices and cook very slowly for about 20 minutes until golden.
  • Add the stock, pepper, and wine, close the lid and bring to HIGH pressure. Stabilize and cook for 15 minutes.
  • Release the pressure and carefully remove the lid.
  • Ladle soup into bowls with a slice of toasted bread on top and sprinkled with the cheese.
  • Optional: Put the bowls under the broiler for 10 minutes at 350°F, or until the cheese bubbles and is slightly browned. You will need to make sure you are using oven-safe bowls.
