  • 3 lb fresh fava beans
  • ½ cup olive oil
  • ¼ lb Serrano ham diced, or other cured ham
  • 2 teaspoons fresh mint finely chopped
  • ½ Lemon juiced
  • Salt and pepper to taste


  • Remove the fava beans from their pods.
  • Heat the oil in a heavy skillet, add the beans and cook 10 minutes.
  • Add the ham, salt and pepper. Add the salt little by little and taste for flavor as cured ham is already salted.
  • Add the mint. Cook 2 or 3 more minutes before spraying with lemon juice and serve.
