- 1.5 lbs. chicken breasts skinless, boneless
- Italian seasoning as needed
- Olive oil as needed
- 1 large egg
- 3 tablespoon milk
- ¾ cup panko breadcrumbs
- ½ cup grated parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt as needed
- Pepper as needed
- Cooking spray as needed
Instructions
- To prepare the cutlets, pound each chicken breast to an even ¼-inch thickness. If necessary, slice the breast in half, lengthwise, to achieve a nice thin cutlet.
- Drizzle the chicken with olive oil and rub with Italian seasoning, salt, and pepper. Place in a sealable container or Ziplock bag and marinate it for at least 1 hour, ideally overnight.
- In a large bowl, whisk the egg, milk, salt, and pepper.
- In a shallow dish, combine the breadcrumbs, parmesan cheese, garlic powder, and smoked paprika.
- Dip the chicken into the egg mixture, then dredge it into the panko mixture, lightly pressing to coat. Line a cooking tray with parchment paper.
- Place the chicken onto the prepared cooking tray and spray with cooking oil spray. Work in batches if necessary.
- Bake in air fryer oven at 400˚F for 10 minutes. Flip the chicken and bake for 3-5 more minutes at 400˚F, or until golden and cooked through. Repeat for each batch.
- Serve hot for maximum crispiness!
