Ingredients
- 3 tablespoons olive oil
- 1 large onion
- 6 medium potatoes peeled & cubed
- 1 pound broccoli washed & trimmed
- 32 ounces chicken broth
- 2 teaspoons thyme
- Salt & pepper to taste
- 1 cup milk or half & half
Instructions
- In a pressure cooker, sauté the onion in olive oil for 3 minutes. Add potatoes & broccoli continue to sauté for an additional 3 minutes.
- Add broth and thyme. Close the lid, bring to HIGH pressure, stabilize pressure and cook for 12 minutes. Remove from heat and release pressure.
- Carefully open the lid when ready. Add salt and pepper to taste and let cool slightly.
- Transfer to a blender and puree adding milk or half & half until smooth and creamy. Serve hot.
