  • 3 tablespoons olive oil
  • 1 large onion
  • 6 medium potatoes peeled & cubed
  • 1 pound broccoli washed & trimmed
  • 32 ounces chicken broth
  • 2 teaspoons thyme
  • Salt & pepper to taste
  • 1 cup milk or half & half


  • In a pressure cooker, sauté the onion in olive oil for 3 minutes. Add potatoes & broccoli continue to sauté for an additional 3 minutes.
  • Add broth and thyme. Close the lid, bring to HIGH pressure, stabilize pressure and cook for 12 minutes. Remove from heat and release pressure.
  • Carefully open the lid when ready. Add salt and pepper to taste and let cool slightly.
  • Transfer to a blender and puree adding milk or half & half until smooth and creamy. Serve hot.
