Ingredients
 
 

  • 1 pound Hearty fish filets cut into chunks
  • 1 pound Lobster tail cut into chunks
  • 12 ounces Scallops
  • 1/4 pound Shrimp
  • 6 Clams in shells
  • 4 cups Water
  • 3 tablespoons Olive oil
  • 2 Onions chopped
  • 2 cloves Garlic
  • 3 Tomatoes peeled, seeded, and chopped
  • 2 tablespoons Parsley chopped
  • 1 Bay leaf
  • 1 teaspoon Thyme
  • 1/4 teaspoon Saffron optional
  • salt to taste
  • pepper to taste

Instructions
 

  • Heat the oil in the pressure cooker pot and sauté the onions. Add the garlic, parsley, tomatoes, bay leaf, thyme, water, salt, and pepper.
  • Close the lid and bring to pressure. Cook for 5 minutes on HIGH pressure or 8 minutes on LOW pressure.
  • When the cooking time is done, release the pressure, open the lid, and add fish and seafood. Stir well.
  • Close the lid, bring back up to pressure and cook for 3 minutes on HIGH pressure or 5 minutes on LOW pressure.
  • When done, release the pressure, open lid and, remove bay leaf. Serve hot.
