- 1 pound Hearty fish filets cut into chunks
- 1 pound Lobster tail cut into chunks
- 12 ounces Scallops
- 1/4 pound Shrimp
- 6 Clams in shells
- 4 cups Water
- 3 tablespoons Olive oil
- 2 Onions chopped
- 2 cloves Garlic
- 3 Tomatoes peeled, seeded, and chopped
- 2 tablespoons Parsley chopped
- 1 Bay leaf
- 1 teaspoon Thyme
- 1/4 teaspoon Saffron optional
- salt to taste
- pepper to taste
Instructions
- Heat the oil in the pressure cooker pot and sauté the onions. Add the garlic, parsley, tomatoes, bay leaf, thyme, water, salt, and pepper.
- Close the lid and bring to pressure. Cook for 5 minutes on HIGH pressure or 8 minutes on LOW pressure.
- When the cooking time is done, release the pressure, open the lid, and add fish and seafood. Stir well.
- Close the lid, bring back up to pressure and cook for 3 minutes on HIGH pressure or 5 minutes on LOW pressure.
- When done, release the pressure, open lid and, remove bay leaf. Serve hot.
