  • ½ cup granulated sugar
  • ½ cup greek yogurt
  • ½ cup all-purpose flour
  • 1 cup blueberries
  • 1 large egg
  • ½ vanilla bean
  • 1 ½ teaspoons baking powder
  • ½ teaspoon powdered sugar
  • Cooking Spray


  • Toss the blueberries in a little bit of flour to coat them. Set aside.
  • Mix the sugar, egg, yogurt, and flour in a bowl. Cut the vanilla bean in half, scrape the seeds from the inside and add into the mixture.
  • Using a hand mixer on low speed, mix for 5 minutes.
  • Add in the baking powder, and then turn up the speed, carefully add in the blueberries.
  • Spray two small 6-well muffin pans with cooking spray. Fill each well 2/3 full.
  • Preheat the air fryer to 325°F for 2 minutes. Then bake each pan separately for 18 minutes.
  • Let the muffins cool and lightly sift powdered sugar over the tops.
