- ½ cup granulated sugar
- ½ cup greek yogurt
- ½ cup all-purpose flour
- 1 cup blueberries
- 1 large egg
- ½ vanilla bean
- 1 ½ teaspoons baking powder
- ½ teaspoon powdered sugar
- Cooking Spray
Instructions
- Toss the blueberries in a little bit of flour to coat them. Set aside.
- Mix the sugar, egg, yogurt, and flour in a bowl. Cut the vanilla bean in half, scrape the seeds from the inside and add into the mixture.
- Using a hand mixer on low speed, mix for 5 minutes.
- Add in the baking powder, and then turn up the speed, carefully add in the blueberries.
- Spray two small 6-well muffin pans with cooking spray. Fill each well 2/3 full.
- Preheat the air fryer to 325°F for 2 minutes. Then bake each pan separately for 18 minutes.
- Let the muffins cool and lightly sift powdered sugar over the tops.
