- 4 slices bread artisan, ciabatta or whole wheat
- 1 ripe avocado
- 1 tablespoon fresh mint chopped
- 1 tablespoon lemon juice preferably fresh squeezed
- ¼ teaspoon salt
- 2 tablespoons feta crumbled
- Pepper to taste
Instructions
- Toast the slices of bread in the air fryer until golden brown, about 6 minutes at 400˚F.
- While the bread is toasting, remove the avocado meat and mash it in a bowl.
- Add the lemon juice, salt, and pepper and mix. Spread avocado on toast. Sprinkle with shredded feta cheese and mint.
