  • 4 slices bread artisan, ciabatta or whole wheat
  • 1 ripe avocado
  • 1 tablespoon fresh mint chopped
  • 1 tablespoon lemon juice preferably fresh squeezed
  • ¼ teaspoon salt
  • 2 tablespoons feta crumbled
  • Pepper to taste


  • Toast the slices of bread in the air fryer until golden brown, about 6 minutes at 400˚F.
  • While the bread is toasting, remove the avocado meat and mash it in a bowl.
  • Add the lemon juice, salt, and pepper and mix. Spread avocado on toast. Sprinkle with shredded feta cheese and mint.
