Heat the frying oil in a sauté pan to 375˚F.
While the oil is heating, sift the flour, sugar, baking powder, and salt into a large bowl and whisk.
Add the milk, eggs, vanilla, and oil and mix well. Fold in the apples until evenly distributed.
Working in batches, carefully drop about a spoonful of batter into the hot oil. Deep fry until golden, about 5 minutes depending on your red doneness. Flip to fry on all sides, if necessary.
Use a slotted spoon or tongs to transfer the fritters to a paper towel-lined plate or cooling rack.
Sprinkle with powdered sugar before serving.
