Blueberries & Cream Oat Groats
Laura PazzagliaYou don’t have to wait for blueberries to come into season, use the freeze-dried ones. Because of the milk in this recipe, it cannot be set to cook later with the “delay” timer. If you’d like to anyway, substitute the milk with additional water.

Ingredients
- 1/3 cup oat groats rinsed
- 1/3 cup vanilla soy milk
- 2 tablespoons freeze-dried blueberries
- 1 pinch salt
- ½ teaspoon raw sugar
Instructions
- Add 1 cup of water to the cooker, insert the trivet and steamer basket.
- In a small heat-proof bowl or mug, add the groats, soy milk, blueberries, and salt. Mix well and lower the bowl into the cooker. Close the lid and set the valve to the pressure position.
- If using a stovetop pressure cooker, bring to HIGH pressure and cook for 28 minutes. If using an electric pressure cooker or multi-cooker, bring to HIGH pressure and cook for 20 minutes.
- When time is up, open the pressure cooker using the natural release method.
- Vigorously mix the contents of the bowl, sprinkle with sugar and serve.
